End of a busy week!
Here is a couple LO's I did, while trying to catch up on this months photos...didn't get to far, but least I'm into March already, so who knows, maybe I can at least keep up within a month, although I'd really like to do better than that. LOL
Both of these Lo's show the puppies, the 2nd one is where Hobo wanted to rest, and Lady didn't, so he just lay down across her, so she couldn't get up and pounce on him again. Yes I kinda miss them...but I've been to busy to miss them much, so that's a plus I guess!! LOL

This has been one busy week around here, I'm glad its about over! I think I've been in the kitchen for one reason or another for most of it too. I hope that stops soon...at least unless I'm canning. LOL With the cheese I've been making I finally decided I wanted to use it for more than just on Potatoes or Broccoli, or chili, (or anything else I am not remembering right now, that we like to use it on) so I made some lasagna and pizza today with it.
We had pizza tonight, and it was so yummy!! I did it a little different than I usually do, it actually had two different crusts on it, as I was trying out two different recipe's for crust to find out which we liked better, and I added a little to the sauce I usually use. The crust I usually make, is my Mom's recipe, and while we really like it, I wanted to find one that would raise more cause we like a thicker crust. Even if I try to make hers thicker, I didn't have good luck with it actually being thick like I like...so I went looking for another one. The one we liked is here...although I did add a little whole wheat flour, not as much as I should have, but I didn't have time to grind any more. Now we can trade back and forth, depending on if we want thick or thin!! :) The nice thing about it is, we have leftover pizza for a meal this weekend!! :)
I also made some lasagna, which we will eat this weekend. I don't know when the last time was that I made that...not sure if I ever have, but if I have, it's been YEARS. We both love pasta, but we don't have it real often, cause of the carbs. Usually if we have pasta we have spaghetti cause I have always LOVED it. However, with having all this cheese I finally decided I had to make some lasagna.
Once I was done stacking all the layers I had some noodles left, but no meat for them...so I mixed up the homemade dry cottage cheese, some homemade shredded mozzarella, an egg or two to hold them together, salt, pepper and parsley in a bowl. Then I rolled the cheese mixture up in the left over noodles and poured sauce over them and baked them in the oven for a half hour for lunch. YUM!! It was so good, & DH really loved it, (course he loves most things) and now I guess I'll have to make it again. I just love cheese stuffed pasta! I so didn't need to find another "pasta" dish I loved. *giggle*
Thankfully, with all the cooking I did this week, I won't have to do much this weekend! Yippee!! I love not having to cook much on the weekend. Maybe, if it doesn't rain all weekend, I can actually go outside some...I've not been out as much as I would have liked this week, with being busy. I kinda forget to go most of the time, if I'm busy doing other things...and I really should get some fresh air a little more often.
Last night...or should I say early this morning, I was woke up by thunder, I hate that, cause then I couldn't go right back to sleep. LOL We got a nice rain, so I guess I shouldn't complain. We may get more tonight or tomorrow...if we do, hopefully it won't be an all day affair, so I can enjoy my peaceful Saturday afternoon by going outside some.

I think that if I lived with you, I would be gaining weight, instead of losing it! *lol* ... Can I come for dinner sometime? Oregon isn't too far away! *wink*

*giggle* We don't eat pasta or pizza lots, just happen to do both this weekend for the first time in a long time. But YES, feel free to come for a visit! I'm sure your kids would love the animals. :)
