Green Tomato Salsa
I made some green tomato salsa last week...actually the recipe I used called it relish, but from comments where I found the recipe a lot of people are using it like salsa...including my hubby so that's what I'm going to call it. LOL
DH is LOVING it, and using it on a lot of different foods...a lot of meats he puts some on, and he also loves it with his tortilla chips for a snack or with a sandwich at lunchtime. I had some left, after getting a canner full, so he has a big bunch he has to use up right away...which means he gets as much of it as he wants right now. LOL Once it's used up, he will have to slow down a little...or use it all and then be without till I can make more next year (if I'm lucky enough to get the stuff to do it with).
I found the recipe here...but didn't put quite as much apple cider vinegar in it. I only use 3/4 cup, instead of 1 cup, and used a pressure canner to can the jars with, not a water bath canner...because for some reason the water bath method doesn't want to work for me to well. Also you can use any of the hot peppers you have on hand, they don't have to be jalapenos...the first batch I made to try it and see if we liked it had a different hot pepper in it, cause that's what we had.
If you like salsa, it's a great way to use up some of those green tomatoes if you have any! :)
I'm not much of a salsa person, but Joe would probably like it. :)
